Owners are very careful when it is time to harvest. Olives are picked up when they are green with a shade of purple but not totally ripe. Olives are hand-picked directly from trees and cold pressed the same day.
The result is an oil coloured by a wonderful intense yellow with gold reflects.
This oil is not filtered in order to preserve the olive's nutritive qualities. It is fresh and fruity and has herbs and tomato taste with bitterness and hot shade. Its acidity rate is of 0.2%.
